Fabrique - Charming Swedish Stone Oven Bakery

The small Swedish bakery chain, Fabrique, has successfully expanded to London and New York for good reasons.

Stylish stores with an industrial look provide the perfect backdrop for traditional baking craftsmanship.

Here, crispy sourdough bread, lovingly topped buns, cinnamon and cardamom rolls, cakes, and cookies are all handmade from natural, fresh ingredients.

"We want to be a neighborhood bakery. One where you feel so at home that you might even come by in your pajamas early in the morning if needed.", say Charlotta and David Zetterström.

The couple opened their first bakery in 2008 with the idea of involving small local producers and using the freshest ingredients to create high-quality baked goods.

Their commitment to taking the necessary time for sourdoughs and baking in a traditional stone oven is evident in the moist crumb and crispy crust of their breads.

The sweet pastries and excellent coffee often draw us to one of Fabrique's cozy locations first thing in the morning.

While we haven't shown up in pajamas yet, Charlotta and David have certainly nailed the comfort factor.
