in short..

  • traditional Swedish baking in a cosy industrial setting

  • we love the cardamom buns

  • our favourite branch - in Gamla Stan's Lilla Nygatan

The small Swedish bakery chain, Fabrique, has successfully expanded to London and New York for good reasons.

Right after our first visit, we became Regulars and loyal fans of their Cardamom Buns.

Stylish stores with an industrial look set an appealing scene for traditional baked goods.

There are several lovely locations throughout Stockholm, and we always like to stop by for a quick coffee.

Here, crispy sourdough bread, delicately prepared bread rolls, cinnamon and cardamom buns, cakes and cookies are all handmade from natural, fresh ingredients.

View inside the bakery: Fresh loaves of bread are stacked on shelves behind the counter. Cinnamon buns and cakes are ready in the display case in front. An old white tiled stove stands in the background.

"We want to be a neighborhood bakery. One where you feel so at home that you might even come by in your pajamas early in the morning if needed.", say Charlotta and David Zetterström.

The couple opened their first bakery in 2008 with the idea of involving small local producers and using the freshest ingredients to create high-quality baked goods.

The two met during their university years, working part-time at a bakery.

A shared love for truly great baked goods (which we wholeheartedly share) inspired them to try it themselves.

The Swedish sourdough bread they sold in their very first bakery quickly won over Stockholmers, who were soon more than happy to line up for it. That was the starting point for the small chain we’ve grown so fond of. Just four months later, the second Fabrique location opened.

Their commitment to taking the necessary time for sourdoughs and baking in a traditional stone oven is something you can taste in every bite - in the moist crumb and the wonderfully crisp crust. Sometimes, all it takes is a little good Swedish butter to turn a simple slice of bread into something truly special.

Large chocolate cookies fill the tray in the shop window. Behind them, sourdough loaves and fresh cinnamon buns lie on a wooden crate.

Their sweet pastries and excellent coffee often draw us to one of Fabrique's cozy locations first thing in the morning.

While we haven't shown up in pajamas yet, Charlotta and David have certainly nailed the comfort factor.
